Just because Asian food has become the healthy trend, doesn’t mean you need to pay for over-priced Chinese food you can cook at home. The current trends…eating brown rice, sushi, seaweed, are definitely healthy, and you can make these dishes at home for much less! A popular chain’s lettuce wraps are very easy to make at home and most likely lower in fat content.
I think this is a modified “Pampered Chef” recipe. I don’t have the cookbook and didn’t write down the ingredients, so I’m simply going by smell and taste.
1 lb. ground turkey
Chop the heck out of these veggies
Brown 1 lb. ground turkey in vegetable or chicken broth
Throw in the veggies and cook until most of liquid is absorbed.
Turn burner to low or off
Add 1/4 c. Teriaki sauce
Add 1/4 c. Peanut butter
Stir until well blended and it is ready to eat!
Put in lettuce wrap and enjoy 🙂
Beverages: Normal 70-90 ounces water, 2 cups coffee in AM, large unsweetened tea in PM
Exercise: Trail Run 6 miles with Cocoa
• Egg White Omelette with spinach, tomato, & cheese
Lunch: • Organic tomato soup, can of tuna with 1 T mayo, chopped carrots, banana peppers and pickles
Snack: Mixed fruit, veggie chips
